I picked a lot of apples this fall – several bags! I promised myself that I would keep the apples carefully refrigerated, but around Thanksgiving time we ran out of fridge space and the apples ended up forgotten – and starting to overripen.
There is nothing better than a crisp apple, so I started cooking the apples instead. This is a great way to use up apples that are starting to become too ripe.
Ingredients:
~ 1 apple
~ 1/4+ cup quick oats
~ brown sugar, cinnamon
~ optional: chia seeds, flax seeds, etc.
Directions:
In a small bowl, place a heaping 1/4 cup of quick oats.
Then add brown sugar and cinnamon as desired.
Peel and cube your apples. I peel mine because the skins are wrinkly, but if you prefer, you can keep the skins on.
Add water according to the quick oats directions (for my 1/4 cup quick oats, I used just over 1/2 cup water).
Microwave according to the quick oats directions.
I also like to add in some other things, like chia seeds.
Enjoy!

I’ve had so many apples from my grandfather’s apple tree that I haven’t known what to do with them. This recipe sounds perfect and a great alternative to the usual recipes I make with all the apples I get.

I love any homemade item using fresh apples. My grandma had an apple tree in her yard. So we always had apple recipes. I’ll have to try this recipe though.
