Chickpea, Avocado & Cucumber Salad with Feta Cheese
I love making recipes with chickpeas and vegetables, as it is a great way to get in some healthy ingredients. This is quick and easy to make and is a crowd-pleaser.
Ingredients
15 ounces chickpeas (one can) – rinse and rain
Avocado
Cucumber (English)
1/3 cup chopped cilantro
1/3 cup feta cheese
Olive oil
lemon juice
salt
Instructions
Rinse and drain the chickpeas.
Cut up the avocado and cucumber.
Chop up the cilantro.
In a medium bowl, combine chickpeas, avocado, cucumber, and cilantro.
