I love making recipes with chickpeas and vegetables, as it is a great way to get in some healthy ingredients. This is quick and easy to make and is a crowd-pleaser.

Ingredients

  • 15 ounces chickpeas (one can) – rinse and rain
  • Avocado
  • Cucumber (English)
  • 1/3 cup chopped cilantro
  • 1/3 cup feta cheese
  • Olive oil
  • lemon juice
  • salt

Instructions 

Rinse and drain the chickpeas.

Cut up the avocado and cucumber.

Chopped Cucumbers

Chop up the cilantro.

In a medium bowl, combine chickpeas, avocado, cucumber, and cilantro.

Drizzle with olive oil, lemon juice, and salt.

Mix thoroughly and enjoy!
