I love to eat healthy foods, but I don’t have a lot of time or patience for dedicating to cooking. But finding convenient foods that are either healthy or vegetarian can be a challenge. I recently discovered CedarLane Foods, which has a variety of both refrigerated and frozen foods.

I have a very busy schedule, which consists of rushing to work as soon as the kids get on the bus, and rushing home in time to get the kids off the bus. Needless to say, my schedule doesn’t always mean eating healthy. Or even at all, and it isn’t unheard of for me to skip a breakfast or put off lunch for a couple hours – so I can use all the help I can get! The reality is that convenient meals tend not to be healthy, but CedarLane Foods has a variety of foods whether you are eating healthy, vegan, vegetarian, and so on. This year they are adding new foods to their line that are plant-based and packed with protein.

Between my New Year’s resolutions to eat healthier and trying to be more organized amidst a chaotic schedule, I was excited to dig into some CedarLane salads and frozen meals. These are so easy to serve, whether you eat them right out of the container, or microwave and serve. ​​​​​​

The CedarLane refrigerated salads are not your average salad, and I have enjoyed flavors that I am not used to. It is nice to have pre-made meals that are also unique. For instance, this Superfood Salad with Probiotics, containing golden beets, kale, and swiss chard. While I do prepare healthy foods at home, things like golden beets are not something we usually eat.

​​​​The CedarLane Black Bean & Chickpea Salad is one of my favorites. I loved the combination of ingredients, from the garbanzo beans, to the black beans, peppers, and other vegetables. I really like the flavors including sesame oil and soy sauce. Plus, this dish is good for digestive and immune health, which is an added bonus when you are eating something that is already healthy for you!

In addition to a wide variety of refrigerated meals, CedarLane also offers frozen meals, including their new “Simply Plant Powered” line that is vegan.

The CedarLane Ranchero Tofu Scramble is great for breakfast, brunch, or really any time of day. While I am not 100% vegan, I have been a vegetarian most of my life and don’t eat much dairy, so it is nice to have this option for a vegan meal. I find that we make it to the weekends and there doesn’t seem to be a lot on hand for breakfast, and there’s nothing better than finding something like this in your freezer to save the day.

Weeknights are a challenge lately, as I tend to be running off to one place or another every night. The Penne Alfredo is perfect for when I need some fuel, and added bonus is that this is vegan. It is very hearty, and has a rich flavor, with a vegan cheese alternative. We get home pretty late some evenings, and I appreciate when I can have a meal that tides me over. I also enjoyed CedarLane’s vegan Butternut Squash & Pumpkin Mac & Cheeze, which is a macaroni-style pasta, pumpkin and butternut squash purees, and vegan cheese.

The Cedarlane Creamed Spinach & Kale is so delicious, and we loved the combination of spinach and kale. I have made my own homemade creamed spinach, but I like CedarLane’s version which uses kale and an alternative to diary to make this a hearty vegan dish and a great way to get in some veggies.

We have really enjoyed all of the CedarLane meals we have had, and there are many more I want to try. These make great meal options, and it’s always nice to have vegetarian, vegan, and healthy convenience foods.
