This yummy apple bread is a treat you can make year-round. You can make it in the fall when there is a surplus of apples from apple-picking, or in the spring when store-bought apples tend to be overripe – or any other time of year! I love this bread by itself, just as much as other sweets.
My kids pick a lot of apples in the fall, so we are always looking for recipes to use up all those bushels!
1 cup vegetable oil**
3 cups flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1+ teaspoons cinnamon
3 cups apples (peeled & chopped)
1 tsp vanilla extract
** Alternately, you can use 1/2 cup oil + 1/2 cup applesauce.
Preheat oven to 325 degrees F.
Mix the dry ingredients and wet ingredients (minus apples and vanilla) separately. Then combine the two mixtures.
Add in your 3 cups of of chopped apples and vanilla.
Pour into two loaf pans (bake for 1 hour) or four small loaf pans (bake 50 minutes).

I wish that we had a place around here to go pick fresh apples off the tree. Fresh apples are delicious in recipes. I’m surprised my grandma didn’t make apple bread. She made apple pies or cobblers with the apples off their tree.
