I love coming up with new salad combinations. I end up with an abundance of kale in the summer, and it is nice to have some fresh, healthy dishes to make.

Ingredients

  • 1 cup cooked quinoa, cooled
  • 2 cups kale, chopped
  • 1 cup tomatoes, chopped – I prefer grape but you can use cherry 
  • 2 tablespoons extra virgin olive oil
  • salt and freshly ground pepper to taste
  • Feta cheese

Directions

Prepare the quinoa according to the directions, and allow to cool.

Wash the kale thoroughly. You don’t want to end up with sand in your salad! Then, dry the kale thoroughly.

Kale

Now drizzle the kale with olive oil and dust with salt, and then massage the kale. We are a fan of Graza olive oil, which is very flavorful.

Use your hands to squeeze and scrunch the kale. This helps in distributing the oil and break down the leaves.

I usually allow the kale to sit for a little bit to rest and further wilt.

Mix everything together, using your discretion and personal preferences as far as what ratios you like the best. Add salt to taste.
