This is a nice fresh salad that is easy to make and tastes awesome.  I find myself craving this when I want something fresh and flavorful, and it is great year round.  The hardest part is probably finding avocados that are just right!

Avocado Salad

Ingredients

Tomatoes (one pack of cherry or grape tomatoes)

English Cucumber

2 Avocado 

Cilantro

Lemon juice

Salt and pepper

Directions:

Halve the tomatoes, and chop the cucumbers into chunks.

Mince a handful of fresh cilantro, and toss with the tomatoes and cucumber.

Avocado Salad

Chop up two ripe (but firm) avocados.  Toss gently with the rest of the mixture as well a splash of lemon juice.

Add salt to taste (and pepper, if desired).

Enjoy!  This salad is best eaten fresh, since the avocado will start to oxidize.
