I absolutely love arugula, and smoked mozzarella cheese.. and white pizzas!  When I saw an arugula pizza, I knew I absolutely had to try making one at home. 

Arugula & Smoked Mozzarella Pizza

I especially love this in the summer when I get fresh organic veggies from the farmer’s market or when I pick them from the garden.  I planted some arugula a couple years ago, and little did I know that it would take over the garden!

Needless to say I have an abundance of arugula in the summer months.

For this pizza, we used organic heirloom tomatoes in different colors to give the pizza some extra color.

This pizza is downright amazing!

Ingredients

½ cup ricotta cheese
2 cloves garlic, crushed
1 teaspoon salt
¼ teaspoon freshly ground black pepper
2 cups (8oz) shredded smoked mozzarella cheese
1 packed cup (1 ounce) arugula
Flour (for dusting)
1 ball store-bought pizza dough (1lb)
Extra-virgin olive oil, for drizzling

Directions

Preheat oven to 475 degrees F.

Blend your ricotta, garlic, salt, and pepper in a food processor until smooth. 

Then add the smoked mozzarella and arugula, pulsing it so that it is mixed, but still a little chunky.

Arugula & Smoked Mozzarella Pizza

Prepare your pizza dough into an approximately 14″ diameter circle; then place on your baking sheet.

Drizzle the dough lightly with olive oil, then spread your ricotta/cheese/arugula mixture on the pizza dough.

Arrange fresh tomato slices on top, and then drizzle once more with olive oil.

Bake for about 15 minutes, or until the crust is golden.
