Beet Smoothies
I like to have a healthy smoothie every morning.  Needless to say I like to try different variations on the ingredients I use.  I don’t eat beets very often, so when I had some leftover cooked beets, I figured I would use them in a smoothie.

This smoothie is a good way to reap the great benefits of beets, as they are packed with vitamins and minerals and are known for things like detoxifying and as a source of energy.

Additionally, I use kale in this recipe to make it a nutrition-packed smoothie!

Kale

Ingredients

~ 1.5 cups almond or coconut milk

~ 1 banana

~ handful of fresh spinach or fresh kale

~ 1 cooked beet

~ optional – honey to sweeten, matcha powder, chia seeds, etc.

Directions

Place the milk and greens in a blender, and mix until smooth.  Since I use kale, including the stems, it makes it easy to blend the greens first with the coconut or almond milk before adding the additional ingredients.

Then add the remaining ingredients, and blend until smooth.

Because this is not an exact recipe, you can adjust the amount of milk if you want a more liquid smoothie versus a thicker smoothie.
