Chia seeds are one of those great super foods that have so many great benefits. As a vegetarian, I love getting this source of natural Omegas and other nutritional benefits. The history of chia seeds and chia drinks goes way back, and it is said that Aztec warriors ate chia seeds for better endurance.

This drink is an easy and unique way to enjoy chia seeds. Essentially it is a refreshing drink with chia seeds suspended in it. You can also do this with a variety of different drinks, but lemon juice a nice way to enjoy healthy hydration.

I use organic chia seeds, and there are both white and black seeds. It doesn’t really matter which ones you choose, as there won’t be a taste difference (you aren’t actually chewing the seeds).

Ingredients

  • 2 cups water
  • 2 tbsp chia seeds
  • 1 tbsp fresh lemon juice
  • Sweetener, to taste

Directions

Mix the chia seeds and water. You can put it in a glass and stir it, or I like to put it in a mason jar with a lid, so that I can periodically shake it. The chia seeds will want to stick together and get clumpy, so it is nice to have a way to easy break them up.

The chia seeds will swell up and get gummy.

Once the seeds have absorbed enough water, add your lemon and sweetener.

Shake again to combine and re-suspend the seeds, and enjoy!
