Tomato Mint Bites

This is a recipe inspired by growing fresh veggies in the garden and trips to the farmer’s market.  If you are looking for an easy way to use fresh-picked items, this recipe is a quick way to go from farm to table!  It is refreshing and absolutely tasty.

We love picking fresh mint and tomatoes right from our garden.

Ingredients

Bread (I made my own homemade Bread using the recipe here, but you could use a baguette or other bread)
1/4 cup Feta cheese
1/4-1/2 cup reduced fat sour cream
1/2 of a fresh squeezed lemon
Black Pepper, to taste
1 small thinly sliced tomato
3 chopped mint leaves (or you can use basil instead)

Tomato Mint Bites

Directions

To make the “spreadable cheese”,  mix the Feta, sour cream, lemon juice, and black pepper in a food processor (I use my mini food processor).  I only let it blend for about ten seconds because I want the texture to still be a bit chunky.

Cut slices of bread into quarters, spread with cheese, and sprinkle with pepper.

Top with sliced tomato and chopped mint.

You can also mix this up with variations on bread and vegetables!
