We love roasting veggies with cheese, and we started doing this years ago with garden veggies, and we call it “Casino veggies”. Many years later this is one of our favorite way to prepare veggies, and the whole family enjoys this recipe. You can tailor it to your tastes, depending on what vegetables and seasonings you choose.
Ingredients
Vegetables ā any combination of zucchini, summer squash, eggplant, tomatoes
Olive Oil
Parmesan cheese (shredded)
Garlic powder & Onion powder (or other seasoning of your choice)
Salt & pepper to taste
Optional ā bacon bits
Directions
Preheat oven to 325 F.
Wash and cut the vegetables.
~ For zucchini and summer squash, cut lengthwise.
~ For eggplant, cut approx. 3/4ā³ slices
~ For tomatoes, cut in half and remove insides/de-seed. We have used different kinds of tomatoes, such as Roma and others, and they all work fine.
Place vegetables on a cookie sheet (we line ours with non-stick aluminum foil).
Drizzle vegetables with olive oil.
Sprinkle with onion powder, garlic powder, salt and pepper.
Pile with shredded Parmesan.
You can also top with bacon bits.
Cook for about 40 minutes, checking regularly, until veggies are tender and cheese turns golden.
