Easy Banana Oat Flour Muffins

I love oatmeal.  I have recently discovered that throwing it into my food processor and grinding it up makes cheap easy oat flour.  Oat flour has less carbohydrates than regular flour, and allows you to incorporate the health benefits of oats (lowers bad cholesterol, may help control high blood pressure, helps with insulin sensitivity) into your baking.

Not only were these kid and husband approved, my kids were behind me in a line waiting for more while I was snapping pictures for this post!

Ingredients

1-¼ cup Oat flour
½ cup plain nonfat Greek yogurt
1 egg
1/4 cup honey
1 tsp baking powder
½ tsp baking soda
1 tbsp ground flaxseed**
½ tsp vanilla
1 brown/overripe banana (mashed)
2 tbsp “add ins”- we chose 2 tbsp chocolate chips, but you could use walnuts, raisins, dried cranberries, etc

**Don’t worry if you don’t have flax seed- the recipe will still work without it.  It does add fiber and healthy fats to the muffins though, so use it if you can.  I get mine here on Amazon.

Directions

Preheat oven to 400*. Spray mini muffin tin tray (24 count) lightly with oil spray.

Stir all ingredients together in a large bowl. Fold in your 2 tbsp of “add ins”.

Pour into muffin tins and bake for 7-8 mins or until lightly golden and top of muffins look “set”, not soggy.

Enjoy!

Once the muffins cool, place them in baggies of 3 mini muffins. Just because something is made of healthy ingredients it doesn’t mean you can eat 10 of them. Portion, portion, portion.
