The amount of decent cooking I do has really taken a nosedive.  Before having kids, we would experiment with lots of great recipes, from homemade french fries to complicated desserts.  Since having kids, my time and patience has definitely diminished.  And while I try to get nice dinners on the table, I am usually too tired to plan out meals that involve a lot of ingredients or prep time, not to mention I dread any kind of cleanup.

Recently I had a chance to try Terra’s Kitchen, which is a unique meal service.  At first I was a little hesitant – I am a vegetarian, plus I don’t even have a lot of time to be browsing online.  But as soon as I went on the Terra’s Kitchen website, I realized this was going to be a breeze.  I started with my zip code, then chose meal sizes (for me, 4 meals for 2 people), and simply selected the meals from a list.  I had narrowed the options down to vegetarian, so the options were laid out perfectly.

I literally felt a sense of relief wash over me realizing that I would have several days worth of meals mapped out for me!

The meals arrive in this really cool fridge-like cooler!  The neat part is, you peel off your shipping label to reveal a return label, set it out on the porch the next morning, and it gets picked up and returned.

Once everything was unpacked, I had to decide which meal to start with.  I decided on the Black Bean Sliders, which sounded great because we are vegetarian.  It is so easy to coordinate the meal by gathering the meal card, and then the ingredients, all of which are labeled with the number that matches the card.  This is great especially if you are making cooking a family affair, as my kids helped gather the ingredients from the fridge.

I had to mince some jalapeno pepper for this recipe, but I was sauteing ingredients and had my recipe underway in no time.

There was an option to add egg and bread crumbs to the burgers, which I generally have, but we were out.  The recipes don’t require anything from your own kitchen, but in this case, I think the optional egg would have helped hold the burger together a little better.  However, no worries, egg is a staple that we are rarely out of in our fridge, so I would be ready next time around.  The sliders were great, and the addition of fresh cilantro that was provided was perfect!

Another recipe we tried were tortillas.  Keep in mind that the recipes are really easy to make, but I did learn some new cooking techniques along the way – like the Vegetarian Tacos.  Step 2 requires you to char your tortillas!  And yes, creating this flavor is a game changer!

The Vegetarian Tacos were easy to make, and I thought they came out beautifully AND tasted wonderful.  I liked the ingredients, and I think using the radishes for a little bit of crisp and spiciness is brilliant!  The result was fantastic and I will definitely be making these again!

The Mediterranean Quinoa Toss came with some beautiful red quinoa.

This recipe tasted amazing.  What I love is that these recipes are doable, but are so well thought-out.  In this dish, it was the capers that brought together the ingredients and made this so flavorful!

I also made a Buddha Bowl, which was a delicious dish with veggies, rice, and chickpeas.

Of the four meals I received, I think the Mediterranean Quinoa Toss was our favorite!  That being said, I enjoyed all the meals and would make them all again.

I thought all the meals I received came out fantastic!  I was impressed with how easy it was to make the meals, but they also looked like I put a lot of work into them.  My husband doesn’t get home until late, and this gave me the ability to make a quick meal once he got home that we could enjoy together.

We had a great experience making the meals.  The only issue we had was an avocado that wasn’t ripe enough or ready to use for the Buddha Bowl.  I recommend looking through the recipes and coming up with a strategy, and checking the ingredients.  If you can plan ahead, something like the unripe avocado would be set to go within a few days and not be an issue.  I think Terra’s Kitchen did a great job making everything ready to go, and of all the ingredients, I am impressed that the only issue was an unripe avocado!
