My kids are both vegetarian, so I look for creative meal ideas.  People often assume we eat a lot of tofu since we are vegetarian, but we actually do not.  However, we do like tofu, and after trying this recipe, my kids are a huge fan of this fried tofu!  It is pretty easy, and is based off a recipe for larger pieces of tofu (so you can modify the recipe to use larger pieces of tofu instead of purchasing cubed tofu).

Fried Tofu Cubes

Ingredients;

16oz block extra firm cubed tofu)
Optional – 2 cups vegetable broth (I use Vegetable Better Than Bullion)
vegetable oil
1/2 cup all-purpose flour
3 tablespoons nutritional yeast
1/2 teaspoon cayenne pepper
salt & pepper

Directions:

Drain and press your tofu.

Optional: place tofu in a bowl and soak in broth.  To cut down on time, I leave out this part of the recipe, but if you have enough time to prepare ahead of time, it will add some extra flavor.  If you leave out this step, you may want to add more salt to the dry ingredients.

Combine your dry ingredients – flour, nutritional yeast, cayenne, salt, and pepper.  You can adjust the spiciness as well as the saltiness depending on your taste, especially if you are serving to kids.

Mix the dry ingredients thoroughly.

Warm your oil in a skillet.  Roll the tofu in the dry mixture.  Don’t be afraid to heavily coat.
