Fig & Gorgonzola Puff Pastries

I am not usually a fan of sweet and savory flavors, and this is also the kind of appetizer that looks like a lot of work.  I was pleasantly surprised when we made these puff pastries and I fell in love with them!  They are easy enough to make, and they are incredibly delicious!

One of my cooking shortcuts is that we always keep small batches of caramelized onions in the freezer.  We use them in so many dishes, from pasta to paninis, and it cuts down a lot of time and cleanup for when you need them.

Ingredients

Olive Oil
1 onion
1 package Puff Pastry
1 egg white
6 oz gorgonzola cheese
Dozen+ fresh figs
Salt & pepper to taste

Instructions

Slice the onion and caramelize in a pan using olive oil.

Preheat the oven to 500 degrees F.

Lightly flour your counter and roll out the puff pastry dough, cutting into 6″ squares (approx).

Work in smaller batches at a time so that these are manageable – maybe a half dozen at a time.

Take the corners of each square and fold into the center of the square just so that the corners meet in the middle.  Place these folded squares on a cookie sheet lined with parchment paper.

Brush each folded square with egg wash (egg white whisked with 1 tablespoon of water).

Add your ingredients to the top of each folded square – caramelized onions, some crumbled gorgonzola, and 2 quarters of a fresh fig.

Bake at 500 for about 10-15 minutes, rotating if necessary.  Remove when the puff pastry turns golden.
