Tomato Mint Bites

Homemade bread with Feta spread, Tomatoes, and Mint

This is a recipe inspired by growing fresh veggies in the garden and trips to the farmer’s market.  If you are looking for an easy way to use fresh-picked items, this recipe is a quick way to go from farm to table!  It is refreshing and absolutely tasty!

Tomato Mint Bites

Bread (I made my own homemade Bread using the recipe here, but you could use a baguette or other bread)
1/4 cup Feta cheese
1/4-1/2 cup reduced fat sour cream
1/2 of a fresh squeezed lemon
Black Pepper, to taste
1 small thinly sliced tomato
3 chopped mint or basil leaves

Tomato Mint Bites

To make the “spreadable cheese”,  mix the Feta, sour cream, lemon juice, and black pepper in a food processor (I use my mini food processor).  I only let it blend for about ten seconds because I want the texture to still be a bit chunky.
Cut slices of bread into quarters, spread with cheese, and sprinkle with pepper.
Top with sliced tomato and chopped mint.

    I love this recipe! I do make my own bread, and this is a wonderful way to have some tasty bites – I love the Greek theme and the mint is the perfect finishing touch – yum!
