This yummy apple bread is a treat, and is nice to make year-round.  You can make it in the fall when there is a surplus of apples from apple-picking, or in the spring when store-bought apples tend to be overripe – or any other time of year!  I love this bread by itself, just as much as other sweets.

My kids pick a lot of apples in the fall, so we are always looking for recipes to use up all those bushels of apples before they go bad.

Indian Ladder Farms

Ingredients

1 cup vegetable oil**
3 eggs
3 cups flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1+ teaspoons cinnamon

3 cups apples (peeled & chopped)

1 tsp vanilla extract

** Alternately, you can use 1/2 cup oil + 1/2 cup applesauce.

Directions

Preheat oven to 325 degrees F.

Mix the dry ingredients and wet ingredients (minus apples and vanilla) separately.  Then combine the two mixtures.

Add in your 3 cups of of chopped apples and vanilla.

Pour into two loaf pans (bake for 1 hour) or four small loaf pans (bake 50 minutes).
