Mashed cauliflower is a simple side to prepare, and an easy way to use cauliflower. It can be a low-carb alternative to mashed potatoes.
1 head cauliflower, washed and cut into florets
1 tablespoon butter
1 clove garlic, minced
1/4 cup grated Parmesan cheese
2 tablespoons cream cheese
salt & pepper to taste
Steam cauliflower until tender, approximately 10 minutes.
While the cauliflower is steaming, heat butter in a small skillet over medium heat. Add the garlic and saute, being careful not to burn. Remove from heat.
Place half of steamed cauliflower in a food processor, blending until smooth. Add the remaining ingredients, blending thoroughly. Check the taste so that you can adjust the amount of salt and pepper accordingly.
You can also adjust other ingredients, such as the cream cheese and butter, to your desired taste and texture. It is always easy to add more once the cauliflower is blended.
