As my garden flourishes, I try to find creative ways to use kale. It is easy to grow and loaded with antioxidants, iron, vitamin C, calcium, and other nutrients. Sometimes I want something a little different from sautes and soups, and this smoothie is very easy to make. There are so many variations you can do on this recipe, using different fruits and ingredients (such as a Strawberry-Kale Smoothie).
1 cup coconut milk (or any combination of your choice of milk/vanilla yogurt
1-2 cups kale
* optional – chia seeds, ground chia, flax seeds, etc.
(Makes one smoothie)
Wash the kale and remove the stems.
Break a banana into several pieces.
Drizzle with honey.
Add the milk/yogurt and blend until smooth.
I have made this recipe with some ground chia, and it adds a little extra nutritional boost.
Just sprinkle on top and blend in.
