There is nothing like fresh-from-the-garden tomatoes! I really enjoy the pure taste of them, so in this dish, I kept the ingredients simple.
1/2 cup Grape/Oblong tomatoes cut in half or thirds
1/2 cup cubed fresh mozzarella cheese
Salt and pepper to taste
1-2 Tablespoon Newman’s Own Balsamic Vinaigrette (or any dressing that’s light and you enjoy)
1. Cut tomatoes in half/thirds, sprinkle with a little salt and fresh cracked back pepper
2. Cube cheese
3. Toss all ingredients in small bowl
Yield (serves): 1-2 people
I actually eat this for lunch some times, but that’s just me – I love love love tomatoes and fresh mozzarella!
