Tony’s Special

This dish started out as a traditional African dish called “Boo-bootie”…yes, a funny name I know.  But I made some changes here and it has become a family favorite in our home.  Do not let the ingredients dissuade you from cooking it – the final dish is fantastic!
1/2 large onion diced
1. inch ginger peeled and diced
1/2 cup diced apricots
1/4 cup honey
1 tsp. ground turmeric
1 tsp. ground cumin
1/4 tsp. curry powder
1/2 tsp. paprika
1/2 tsp. coriander
1 tsp. salt
1/4 tsp. ground cinnamon
few grates of fresh black pepper
1 pkg. ground turkey
6 eggs
1 tsp. lemon zest
1/2 tsp. ground nutmeg
2 slices bread
1/4 cup milk
3 bay leaves
toasted almonds
3 cups rice
1/2 cup shredded coconut (sweet if great!)
2 Tbl. butter
2 tsp. salt
6 cups water *if brown rice, add an extra 3/ cup water*
1. Chop onions, garlic, and apricots (set aside in small bowls), then measure out spices (tumeric through black pepper) into another small bowl
2. Start soaking bread in 1/4 cup milk
3. Heat large pan to medium heat, pour in oil, onions and ginger
4. Cook until onions are starting to go clear, add spices
5. Add ground turkey, cook through – breaking it up as you go
6. Add bread, breaking it up into small pieces
7. Add honey and apricots, cook and stir until combined
8. Remove from heat, pour contents into a large casserole dish, preheat oven to 350
9. Whisk together eggs, nutmeg, and lemon zest in medium bowl
10.  Pour over meat mixture, press in the bay leaves
11. Bake for 30-40 min or until egg is cooked through (use a toothpick to test)
While dish is baking, prepare the rice.
In a large microwave dish:
1. Add rice, water, salt, butter, and coconut, cover with lid
2. Cook on high for 35 min (45 if brown rice)
Remove bay leaves from dish, serve over rice with toasted almonds on top.
This is such an amazing dish!  I wish I had a photo for you, but I don’t!  :-(  Sorry!  I will post photos as soon as I can cook this (we are in a hotel right now, so the kitchenette does not have an oven = I don’t cook as much here).  I do have a few yummy and interesting dishes via stovetop and microwave though; including a cake!  Drastic times call for drastic measures!
