Don’t let the name fool you, Apple Meatloaf is one of the best home-cooked tummy-lovin’ meals! It’s a favorite of our whole family – even the little guys! Oh, and the Blueberry muffins are to die for! I share a baking secret that will make everyone ask you for your baked goods recipes no matter what kind of bread or muffin you cook! The Recipe: Apple Meatloaf
Ingredients:
1 package ground turkey
1 green apple, diced
1/4 sweet yellow onion, diced
1 Tbl. sugar
3 Tbl. ketchup
1 tsp. salt
fresh ground pepper
2 pieces bread
1/4 cup milk
1 egg
Directions:
1. Place bread and milk in a small bowl to soak
2. Dice apple and onion
3. Combine all ingredients in a large mixing bowl
*Yes, it looks gross, I agree!*
4. Mix well by hand, spoon, or one of your mixer attachments
*It doesn’t really matter – just as long as it’s all combined well and there are no bread chunks!*
5. Place in bread pan, top with more ketchup, and bake at 350 for approximately 40-50 min.
6. Let stand 5-10 min. then slice and serve!
The Recipe: Blueberry Muffins
Ingredients:
2 cups flour (I use whole wheat white from King Arthur)
2 tsp. baking powder
1 cup sour milk* OR buttermilk
2 eggs
1/4 tsp. salt
1/3 cup canola oil
2 Tbl. ground flax
1/2 tsp. pumpkin spice mix
*This is just a combination of cinnamon, cloves, nutmeg and ginger*
1 tsp. vanilla extract
2/3 cup sugar
2 cups blueberries, froze or fresh
Crumble topping:
1 Tbl. flour
1/3 cup sugar
1/8 tsp pumpkin spice
2 Tbl. butter
2 tsp. finely chopped pecans
Mix ingredients with a fork until combined
*Sour milk, buttermilk, plain yogurt, or sour cream are the BEST ingredients to add to any non-yeast bread/muffin/cake/etc. It adds moisture and a rich texture.
To make sour milk: in a small bowl, add 1 Tbl. lemon juice – OR – white vinegar to 1 cup milk. Let stand 5-10 min. before adding it to the rest of the ingredients*
Directions:
1. Make Sour Milk if you don’t have buttermilk
2. Sift together all dry ingredients
3. Whisk together all wet ingredients in separate bowl
4. Add blueberries to dry ingredients and mix until coated
5. Add wet ingredients to the dry mixture and mix until just combined
6. Spoon into prepared muffin cups.
7. Top with crumble topping
8. Bake at 350 for approximately 20 min.
