When I cook too much meat (turkey or hamburger), I throw the extra in a bag in my freezer. When that gets full, I use it to make this recipe. It takes all of ten minutes to throw together and is a huge hit at our house!
1 lb ground turkey (or hamburger)
1 can corn (I use leftovers from another night)
1 envelope taco seasoning (2 T homemade)
1 cup shredded cheese
1 bag tortilla chips
Brown ground turkey (or beef) in microwave. Drain. Add corn, cheese and taco seasoning. Microwave 3 to 4 minutes or until cheese is melted. Serve topped with lettuce, sour cream or whatever you would eat on tacos! Eat with tortilla chips!
