Slow-Cooked Roasted Chicken

I adapted this recipe from 3 different internet recipes.  This is a delicious recipe, and I love that “chicken falls off the bone” result!

Cooking time: 4-5 hours on high or 7-8 on low (Crock Pot)

Ingredients:

(all spices are dried unless specified)
3-4 pounds of chicken (ideally the whole chicken skinned, washed, and in pieces, but you can have any parts you want)
1.5 t salt
1 t pepper
8 tomatoes (your favorite kind – I like romanitas or campanaris the best)
1 t paprika
1 cup carrots, peeled and diced
2 lemons, quartered (or just use 3 T lemon juice)
1/2 cup of chicken broth or apple juice
1/4 t oregano
1/2 t garlic powder
1/2 rosemary
1/4 t parsley (I like fresh, so I use 1T fresh parsley)

Directions:

  1. Add ingredients (except the tomatoes and the broth/apple juice) to a 6-quart crock pot.
  2. Add tomatoes on top and pour the broth/juice.
  3. Cook on low (ideally) for 7-8 hours or high for 4-5 hours. Remember that all crock pots are not alike, so cooking times may vary. I like it cooked on low because by the time it’s done, the chicken falls off the bone.

    I am going to make this!! I usually bake a chicken with root veggies,but crock pots are awesome esp in the winter. Love coming home from a long day with the entire house smelling delicious and inviting!! Thanks so much! Pinnin this one:)
